 Luncheon Tuna Noodles

Spaetzle

Ingredients: 

Egg Noodles (prepared) such as Spaetzle

1 Tablespoon of Butter Stirred into Noodles

Skip Jack Tuna Seasoned with about 2 teaspoons of Lemon Juice and about a 1/2 teaspoon of Black Pepper to taste per 1 can of Tuna use 2 cans to serve up to 4 Choosing to Skip Skip Jack? Just Use Lion's Mane Mushrooms! 😉

Flax Seeds
Topping:

1 Tablespoon Ground Flax Seed

1 Tablespoon grated Parmesan Cheese

1 teaspoon of Poppy Seeds

Mix and stir ingredients for topping together

Carefully stir seasoned Tuna into noodles, and then top!

*Optional* create a Sour Cream based Lion's Mane Mushroom Cream Sauce to pour over noodles and tuna, before topping (Try our Cream Sauce Recipe adding about 1/2 to 1 cup chopped Lion's Mane Mushroom).

Cream Sauce:

3/4 cup Greek Yogurt or Sour Cream

1/2 cup Water or Milk (Any)

2 Tablespoons of  Butter🧈 

2 Tablespoons of Organic All Purpose Flour (Any)

1/4 cup of White Wine *Optional*

*Optional* 1/2 tsp Minced Garlic 🧄 

If adding Garlic, include: 1 Tablespoon of Parsley

*Optional* 1/4 teaspoon of Nutmeg

*Optional* for Alfredo add 2/3 cup Grated Parmesan Cheese

Pinch of Salt & Dash of Pepper

Crisp Green Beans

Alternatively, Choosing to Skip Cream Sauce Try Serving with Lightly Sautéed Crisp Green Beans & Chopped Lion's Mane Mushrooms, or Make a Green Bean Casserole with added Lion's Mane Mushrooms your Side Dish!
