ACK's Linguine Lingonberry Mushroom Plate

 Linguine Mushroom Alfredo 

with Chili Lingonberry Pear Sauce

Linguine

Ingredients:

Cooked Linguine
Lightly Sautéed Button Mushrooms about 1 lbs
(or Blend Buttons with Baby Bellas and Lion's Mane Mushrooms) 🍄 
Parmesan based Alfredo Sauce
Chili Lingonberry & Pear Sauce
Grated Parmesan Cheese

Serves up to 4

To Prepare:

* Choose you favorite Alfredo Sauce or use:

2-4 Tablespoons of Butter

1 1/2 cups of Heavy Whipping Cream

2 cups of Freshly Grated Parmesan

1/4 teaspoon of minced Garlic

Add 1 - 2 teaspoons of the Chili Lingonberry & Pear Sauce 

Combine Sauce and mushrooms to spoon over noodles

* Drizzle some Chili Lingonberry & Pear Sauce over the top about a 1/2 Tablespoon to taste

* Top with a sprinkle of Parmesan Cheese and Serve

*Optional* Suggestion for meat lovers serve with Lamb Meatballs (Or any Meatball of Choice or even Italian Sausage 😉)

Lamb meatballs

1 lbs Ground Lamb

1 medium Red Onion minced

2 cloves of Garlic minced

1 teaspoon Oregano

2 Tablespoon fresh Mint chopped (or 2 teaspoon dried Mint)

1 teaspoon Cumin

1/2 Cup of Breadcrumbs/Panko

1 Large Egg (possibly 2)

1 Tablespoon olive oil

1 Tablespoon Grated Parmesan Cheese

Salt and Pepper to taste

Lightly flour with any all purpose flour

Fry in canola, sunflower, and olive oil blend (lift meatballs with a slotted spoon)


Mix Meat, spices and seasonings, egg, cheese, breadcrumbs, and 1 Tbs Olive oil

Roll into 1 inch balls

Lightly Flour and Fry
